Our Story

Von Ebert is owned and operated by Tom Cook, Dennis January, Eric Simko and Tom S. Cook. Tom S Cook, “Von Ebert Brewing was named after my Great Grandmother Ebert. She was the guiding force to my immigrant family when they came over from Germany to the United States in the early 1900’s. The family name Von Ebert translates to “of the house of Ebert. As Ebert roughly translates to boar in German our theme was born.”

 

 
 
 

Food

We call our cuisine, elevated American pub fare. Chef Jesse Moore, our executive chef, strives to ensure the food menu is as inspirational as the beer list. We are a scratch kitchen; all items are made in house when possible. We smoke all our proteins on a rotisserie smoker with maple and Pacific Northwest Alderwood. We work with local purveyors to ensure quality local and seasonal ingredients.

 
 

BEER

Our trident approach to brewing encompasses what we love most about craft beer. We focus on clean drinking lagers, traditional and experimental hoppy ales, and our mixed culture fermentation program. Each of our breweries has a unique focus. Glendoveer houses our mixed culture and more experimental fermentation, while the Pearl hits heavy with IPAs and German inspired lagers. Between the two breweries we are consistently churning out new and exciting beers, be sure to stop in often to see what’s new!
