Bohemian Pilsener - Decocted Czech-style lager with 100% Czech Saaz; (bready malt, floral hops ) 5.0%
How could such a simple beer, be so complex? The answer was ingredients and process, really the case for all beer. Well, we tried our best to replicate the masterpieces found in the modern-day Czech Republic. This beer started out with floor-malted Bohemian Czech barley. We did very little to the water as our water in Portland is soft, and that is exactly what we want for a beer like this. During the mashing process, we drew off multiple decoctions and boiled them before returning them back to the main mash to raise the temperature up to the next rest. You could say the beer was "Decocted for Flavor Maximization". We then used 100% Czech Saaz hops all the way through which bring an herbaceous, floral quality to the beer that works so well with the malt character from floor-malted barley. Finally, we fermented it low and slow with one of our favorite strains of lager yeast. The resulting beer is something we are quite proud of.
Newest American Pils - Modern Pilsner w/Simcoe, Enigma, and Mosaic; (pine, dark berry, crisp bitterness) 4.8%
Newest American Pils is our third take on our "Modern Pilsner" concept. A combination of old-world mashing and fermentation techniques combined with the hop palette that the present-day affords us, Newest American Pils brings together the smooth crispness of a classic lager with the fruit-forward and dank hop flavors and aromas of today's aggressively hoppy beers.
