Bohemian Pilsener - Decocted Czech-style lager; (bready malt, floral hops ) 5.0% 38 IBUs
Bohemain Pilsener - "One of my favorite types of beer, in fact, one of the memorable beers I ever had, was in the cellar of the Pilsner Urquell brewery in Pilsen, Czech Republic. I remember it was the first time I discovered "layers of flavor" in a beer. How could such a simple beer, be so complex? The answer was ingredients and process, really the case for all beer. Well, we tried our best to replicate the masterpieces found in the modern-day Czech Republic. This beer started out with floor-malted Bohemian Czech barley. We did very little to the water as our water in Portland is soft, and that is exactly what we want for a beer like this. During the mashing process, we drew off multiple decoctions and boiled them before returning them back to the main mash to raise the temperature up to the next rest. You could say the beer was "Decocted for Flavor Maximization". We then used 100% Czech Saaz hops all the way through which bring an herbaceous, floral quality to the beer that works so well with the malt character from floor-malted barley. Finally, we fermented it low and slow with one of our favorite strains of lager yeast. The resulting beer is something we are quite proud of."
Vienna Lager - Austrian-style copper lager; (toasted bread, toffee, nuts) 4.8% 18 IBUs
Vienna Lager - Our take on Vienna Lager is that of a beer rooted in harmonious balance. A beautiful beer much like the city it's named after. We have made this beer before but have never canned it. To me, this beer is a perfect accompaniment to the backyard bbq or a riverside camp meal at the end of the day. Malt forward without being cloyingly sweet, crisp without being thin and just enough noble hop presence to round it out. Our Vienna Lager was the Gold medal winner at this year's Oregon Beer Awards in the Light German and European Lager category. Something we were quite proud of, considering that was the first time we had brewed it.
Pierre Le Chat- G - French Pilsner in the Italian Style; (strawberry leaf, hay loft, lemon peel) 4.8% 31 IBUs
Pierre Le Chat - We sometimes get asked if Italian Pilsner's use all Italian ingredients? While in our case the answer may be no, Jason had the great idea of making an all French ingredient beer and thus French-style pils became "a thing" or French Pils in the Italian-style. Who knows, this may already exist and if it does, I hope we are doing it justice. As you can see here the tongue is firmly planted in the cheek. This beer uses 100% French barley and three different French hops. Strisselspalt and Aramis in both the kettle and the whirlpool and then dry-hopped with Barbe Rouge. I think this is an example of something unique and I think it's a good exercise in following a creative pathway. I thoroughly enjoy pushing the boundaries when it comes to beer and I think this is a great example of that. I once read something that said "I feel you should not get too hung up on style. If no brewer ever tried anything different, many world-class beers would not exist." I don't know if this beer is world-class or not, but we sure do enjoy it. Finally, we get to the name. We named the beer after Jason and Jason's partner Scout's cat, Pierre. Pierre the Cat.
